Stillground sources from the Mandhelingo region in the highlands of Sulawesi, an area known for its volcanic soils and traditional farming practices.

Smallholder farms in this region rely on time honored cultivation methods that produce coffees with exceptional body and earthy complexity. These conditions define the character of premium Indonesian coffee and contribute to Stillground’s grounding profile.

1,200 to 1,600 MASL (meters above sea level)

Beans used in Stillground are grown at moderate high elevations and processed using methods traditional to Indonesian coffee.

A semi washed processing method enhances body and earthy character through partial fermentation and controlled drying.

Decaffeination is performed using the Swiss Water Process, which removes 99.9 percent of caffeine while preserving the coffee’s natural flavor compounds. This method ensures a full flavored decaf experience without chemical solvents.

Stillground features the Java Toraja varietal, a heritage Indonesian cultivar valued for its exceptional body, low acidity, and complex earthy profile.

This varietal thrives in Sulawesi’s volcanic soils and high altitude conditions, producing beans with herbal depth and dark chocolate richness. Its natural resilience and flavor stability make it especially well suited for decaffeination, maintaining character and structure throughout the process.
